FIRST MONDAY OF THE MONTH…

Opps a little late but it the first Monday of the month and you know what that means!... Italian Beef, get there soon before we sell out!

But besides that I also decided to make an old favorite recipe of mine from the days when I atarted cook. The year is 1977, I quit my job as a fire protection design engineer to become a cook at Café Figaro in Chicago. Debbie Majic was the chef, or in those days, just considered a cook at here European Cafe. In my opinion though, she was one of the best and part of the initiation of fine cuisine in Chicago. One of my most memorable recipe of hers was Chocolate Cheesecake, a creamy double chocolate cheesecake in a chocolate cookie crust. Lighter in texture than most it is most definitely a pure chocolate delight.

Making variations of finer dishes I’ve experienced in my career has been one of desires for hank’s. Partly selfish, partly latent cooking desires, I love bringing these recipes to Hawaii. Be there this Monday to share in some my passions.

I am the President of the North American Natural Casing Association (NANCA). I am very pleased to learn that Mr. Adaniya has created a Obama hot dog. As Natural Casing are the wrapper on many hot dogs and sausages world wide I would like to know if the Obama Hot Dog is in a Natural Casing.

Yes indeed, I myself look forward to the first of the month to get my Italian Beef fix. It was exceptionally superb this week.

And as for natural casing, it is a must for a real sausage to have one and as with our hot dogs, the Kukui brand Portuguese used in the Obama is most definitely made with one. I hope that makes the NANCA proud of our tribute to da President!
