PIZZA DOG


So outside of hot dogs I obviously have an obsession with pizza!  Sorry folks, can't help it, so here it is for this Monday's special (1/26/09).  Seems simple enough, take a grilled Italian Sausage, pour on some homemade pizza sauce, add sauteed green pepper then pile on the mozzarella cheese.  Too simple, so here's a trick that I'm borrowing from my friend Cheryl, BLOWTORCH the cheese.  

Speaking of burnt cheese, it is interesting to look at certain cooking techniques.  Chef Dale Levitski (Top Chef season 3) once said to me "the flaws in the dish can be the highlight".   He would intentionally let the cheese on his Croque Monsieur ooze out onto the pan so it would get nice and crispy.  Amazing sandwich, I hired him to work at Trio because of it.  I guess that will have to show up as a special sometime soon.   Stay tuned.....

This was good. Would have been better with french bread (like the stuff you use for the beefs), and toasted in the oven. This pizza place in Waukegan, IL called the Quonset Hut served sausage sandwiches like this. Only, they called 'em bombers.

thanks bill, you're right, I'd love to do one on a big ole piece of french bread but I wanted to stay in the hot dog realm. Italian sausage sandwiches or even better a beef sausage combo, man we got to go back to chicago to get one of those!

That looks amazing! You might not remember us but my boyfriend and I were at your location in the International Marketplace last week and we talked about Crif Dogs.. We are back in NYC now but can't wait to try your creations again when we are back in Hawai'i!

I don't think I have ever had an Italian sausage AND an Italian beef sandwich together at one sitting. btw, looking for tips on slicing my beef thin at home. Do I just need a better/sharper knife?

Gotta slice it cold, on a slicer (there are some small home sized ones) cuz even with a sharp knife it is difficult to get in consistently thin enough. Or screw it, just come to see us every first Monday of the month!

Gourmands from Trio and you at the same table, oh boy! The tasting menu is actually this coming friday and saturday. If you guys cannot make it this weekend, then i will make a special menu next week. Just let me know when you want to come in. I look forward to it. I doubt I could offer 'CUISINE' as great as Grant, but I will have fun trying.
