So Musab are faithful leader on the grill was dying to quell his craving for Bleu Cheese so we let him run with it and he came up with this doggie style Cobb Salad man!  Take a beautiful all-beef Polish Sausage wrapped in bacon, deep fried then topped with lettuce, tomato and Blue Cheese dressing.  Dang that's good, see ya Monday folks!

Well having the President return to the Hawaiian homeland for a visit is indeed always a privelage.  Having him eat local grinds while he and the family are here is something to be respected!  But as with most of us, this man, this regular guy, has multifaceted roots, one of them being in Chicago where this psuedo-local boy  also has deep roots.  So as a brother of taste (which thankfully leaves politics out of the picture), I honor him with our OBAMA DOG!  Our supurb local Kukui brand Portuguese Sausage perfectly grilled then graced with Chicago Style condiments: mustard, relish, onion, pickle, tomato, hot sport peppers and celery salt.  Oh Ya, I proudly vote(d) for that!  A blend of two homelands.  We'll feature it for Monday's special and run it until he comes in or until we get tired of waiting (but really, it's always been available if you ask).  Be well fans, Happy Holidays, Mele Kalikimaka and remember,  always vote in good taste.

The Italian Beef n Sausage Combo flew out of hank's this last Monday. So here's more Italian Sausage for this week's special. Grilled mild links with brown mustard, grilled onion, bell pepper, tomato, sprinkle of basil and if you like a little heat, some of our hot giardiniera pepper mix. Southside Johnnie would go.

They're back! On the heels of Beefy Monday comes the herd of Reindeer Hot Dogs. Our holiday tradition starts tomorrow as we're grill'n these caribou/beef dogs out of Anchorage, Alaska. They're dressed up with seasonal colors too, red ketchup, golden brown mustard, snowy white onions and festive green relish. Oh that's too cute eh?
Come and woof one down while they last.

So after a dog fried with fries on a stick where do you go? South, way south of da border that is! OK, this ain't Kansas, from here it's more like east of da ocean. Anyway, Topher came up with this Taco Dog and I'm here to spout off the glories of it.

Our ono grilled chorizo sausage (hank's killer underdog) with salsa, crisp lettuce, cheddar cheese and a hit of sour cream... It speaks to me cabron!

Well we saw it on the internet and said "craaazy, let's do it!". So straight from the streets of Seoul, we bring you the Korean Kombo, a french fry coated hot dog on a stick. Huh? Ok, we batter a hot dog, coat it with fries and yes, you guessed it, deep fry the sucker! Skewer the whole shebang and serve it with our very own Not So Secret Sauce. No need to order a side with this one, its got it all together man. Have fun with this coming Monday's Special, 잘 먹겠습니다!

OK, beginning this Monday we are one of over sixty restaurants participating in promoting the our largest industry here in Hawaii along with raising funds for the new Culinary Institute of the Pacific at Diamond Head. Now as for hank's as we will feature a special dish for the entire week....

So I happen to be a big fan of this dish and as you guessed it, once I get the hanker'n then I've gotta make it! A Southern French classic, it is really a white bean stew made with pork and sausage, duck or goose and sometimes lamb depending on the version. So I says, hell, we is a pork luv'n kind of island, making it local style is a piece of cake or... is that duck?

Take Chinese roast duck, pork belly and Portuguese sausage cook it for hours with white beans in duck fat and voila, we got some mouth magic going on! Ten bucks for the cause, it's served with two scoops rice and medium drink. So get in line and catch this Monday Special everyday of the next week.

LANAKILA- The Good Table Benefit

So the day after we finishing the exhaustive shooting with Diners, Drive-In and Dives, we were committed to do an ambitious nine-course dinner for four at hank's. As part of the Meals on Wheels program for the elderly here, about fifty restaurants were doing special dinners at 6pm on Thursday October 22 in support of Lanakila, the mothership of this program. No not a hot dog dinner! We offered to do a repast of Trio, my former restaurant, selecting dishes that represent the styles of the great chefs that worked for me.

I fortunately had plenty of help enlisted to accomplish this. Estelle Kaya, former Dining Room Manager at Oahu County Club, lead the way in acquiring all the things needed to transform our space into a fine dining environment, I wanted an surrealistic oasis in middle of hank's . Willie Kaya, former chef at Pacific Club and biggest fan of Trio, prepared the fish course. Gerald Kuboyama, having worked service under Estelle, donated his skills. Our head cook Musab and manager Topher all put in countless hours to make this happen as well as collaborate on amuse and petit fours. Michael took the lead of service, having worked there for several years and Ashley did Dale's dish having been mentored by him. I am forever grateful to all of them in making this tribute dinner a reality.

John, Sky, Brent and Marcel were the perfect diners for this, all were avid wine aficionados, they brought around a total of 24 bottles of wine, WOW! They of course didn't drink them all, but did put a good dent in the collection selecting the best to be paired with the food and sharing freely with the staff. And boy these were some amazing wines, I wish I could remember them all!

John Smiley and his guests got this for a steal even on the buy-now option, $225 total! Knowing this, they were very generous with gratuity that we all in turn donated back to Lanakila. Needless to say, they were all glowing after four hours of dining with us.

Well it was a hell of a week for us with DDD here shooting hank's for their show that will probably air late winter. Now that's a joke for us here in Hawaii, winter! Anyway we were ecstatic to have been selected, what luck, so many deserving places that could of got in! It did take a lot of work however, two 15 hour days of early mornings, hot lights and retakes, all the while trying to keep up with our regular biz. The filming crew made it fun though, Kari, Matt, David and Neil were all so cool, keeping us upbeat and into the whole process. They'll make us look good.

Guy was an amazing fireball of energy and humor, nonstop with the one liners! He loved the Chicago Dog, the Fat Boy and was gaga over the duck fat fries with Curry Ketchup. Even though he was initially skeptical, he was also surprised to find that the Lobster Dog was really a unique treat.

And what a Guy! He was a charmer with little Audrey.

The show will also feature Rainbow Drive-In, Poke Stop, Highway Inn and Nico's. Guy was really digging the food in Hawaii, Spam, Kahlua Pig, luau food and Pipikaula. The boy knows how to eat! What a life eh, tasting all the great joints across the country, my own personal fantasy.

He likes Kahlua Pork, loved our fat boy (bacon) and was gaga over the Curry Ketchup. There you go, we'll put them all together for him! We roll it out on Monday as a big MAHALO to Guy and DDD for having us on their show.

After a shoot day with (DDD0 this weekend perhaps I can squeeze in monday's special at the eleventh hour. I've been hard pressed to come up with a Japanese inspired dog and finally
come up with one that I feel good about. Simply done it is a marriage of flavors
familiar in Japanese cuisine, we dress an all-beef dog dressed with miso-ginger mayo and top it with takuan, scallion and furikake.

We're a far cry from Munich where Oktoberfest is in full swing but we can join in on the food fun! One of the most popular dishes in all of Germany is the Currywurst which Mike did a take on not long ago. This week we are going to do it again just a bit more traditional.
HANK'S CURRYWURST IS ALIVE..... Our Usinger German style Bratwurst grilled, sliced, doused with a good helping of a tomato curry sauce and served on a bed of our awesome fries. So starting Monday, we will be offering this fabulous dish for the entire week (thru Sunday 10/4).

So the creative juices are flowing down on Coral Street. Topher and Mike came up with a cool Monday special to tempt our taste buds. Thai Chicken Dog! Grilled chicken sausage, peanut sauce, bean sprouts, crushed peanuts and Thai basil. Want a little heat, have them squirt on some Sriracha sauce too. I can't wait to come home from the mainland to try it!

Bacon, hell why didn't I think of that? Bacon makes everything taste better so let's jump in and do it! (it'll make Carolyn and Scott happy anyway). Our version, hmmm....

OK, this Monday take our deep fried bacon wrapped Fat Boy, douse it with some of our homemade chili, throw on onions, tomatoes, mayo, mustard and finally a few grilled sport hot peppers. Booooy, save me one!

You know how I start Jones'n for certain foods, well today I've been think about a Ruben sandwich. I love those and don't know where to get a great one here. So of course I start thinking with my haute dog mind to bring a new creation for Monday's special, hell it's been done by other dog places I'm sure so we're tossing our hat in. Bring on Ruben ow ski! Our most excellent Vienna Polish, it has a corn beefy kind of flavor, grilled it, melt swiss cheese on top and throw on some hank's secret sauce and sauerkraut. It cured my craving so come on down this Monday folks but get in line behind me!

Sounds good, deep fry a hot link then toss it with Buffalo hot sauce, add some shredded carrot slaw and dollop on bleu cheese dressing. It was a great Fourth of July here in Honolulu, a perfect hot and humid evening and the Grand Fireworks display at Ala Moana. But let's not forget that after a weekend of grill'n that Monday is the first of the month and Italian Beef reins at Hank's. For time we will also offer the much requested variation of the Italian Beef Combo. A grilled Italian Sausage nestled amongst the delicious sliced beef to add a new dimension if you will to an already tasty sandwich. So add some of dez fireworks in your mouth this Monday at Hank's!

Most people have heard of it, I've never been there personally but always wanted to go for what else but a Coney Island hot dog! Well I hadn't a clue what went into those dogs but a little research show that as with most regional specialities there are the inevitable variations. After consulting our local East Coast experts we stuck to the basics. We're in the middle of the Pacific I don't think we're going to piss anyone staunch New Yorker on ruining there view of the authentic CI Dog, hell I'm a Chicago kid so maybe I'll even make it better, oops, sorry. Monday is the day, have a taste of a legacy... a skinless and rather skinny all beef dog smothered in chili meat sauce that will stick with you for days add a slather of mustard and a sprinkle of onion if you please and there you have it... a Hawaiian Island... I mean, THE CONEY ISLAND HOT DOG! What kind of Island is Brooklyn anyway.

I got this affection for great submarine sandwiches and there's a joint (now a chain) in the mainland called Potbelly that makes one that is a personal favorite. It's called a Wreck; ham, turkey, roast beef and cheese. It's toasted and put together with shredded lettuce, tomato, onion, mayo, mustard, herbs, oil and vinegar. Damn is that good and if eating it doesn't make you a wreck then... have two but that's the limit folks, 2 per gourmand cuz I only have 10. Feeling lucky... well ya bedda come early. (Was going to take a photo, but I ate it, sorry, now we got 9)

So Mondays look like they're becoming a sandwich thing so join us this coming one for a designer sub. OoLaLa!

At one point in my search for breads I thought that European style pumpernickel didn't exist here on the island.  Well I at least found one place with the goods man, Fritz's Deli on Dillingham.  They make really good rye breads and their Bauerbrot was what I was looking, dark and dense, 90% rye.  I love grilled cheese, even the white bread with American Cheese ones but I have a variation that is my favorite.  So Monday it's Swiss on Pumpernickel slathered with lots of butter and grilled toasty. Plain and simple.  Sehr gut Fritz!

OK, you know that when I get cravings Monday Specials is the perfect place for me to get some self serving satisfaction.  So I was having this food memory of a Char-Cheddar Burger and voolah, here you have it!  Grilled Angus Beef with soft White Cheddar, yum, dress it the way you like it and you got a killer sandwich. Dogs, burgers, hey, they're in the same food group... good.

Yes, yes, I know it some of the best thing on earth but we gotta have some rules about ordering Da Beef!  The growing popularity of this Chicago mainstay sandwich has created some GREED in getting our first Mondays of the month special. So here are the new rules in ordering... first come first served (no more phone ahead on this),  a limit of 2 sandwiches per customer and extra giardiniera peppers are 50 cents each.  So I can already hear the whining but hey, share the love man!
If that doesn't work for you, go take your tuna fish sandwich and play in your own backyard.

Just back from a trip to Chicago where European sausage makers thrive, I return with TURDUCKEN from the well known butchery Paulina Market.

A blend of turkey, duck and chicken this is a take off of the rolled poultry delight of the same name.  We'll be grilled this monstrosities (quarter pound or mor
e), splash on an orange marmalade mustard and smother it with grilled onions and roasted red peppers.  I only have a dozen of these babies so need I say more?  Get your butt down to hank's fast brother!!!

Well, the month of May marks the obscure start date of Bratwurst season in the Midwest.  Famous for their tailgating festivities who am I to argue?  So in honor of this, Monday we'll grill up some special Brats I brought back from my last trip to Chicago.  Everyone has their own favorite condiments but I’ll suggest brown mustard, grilled onion and sauerkraut.  Let the games begin folks!

All the hail to the food gods who have sent us Buffalo Boys Hoagies on King St.! I really get excited when a new place like this opens up here offering authentic and quality food.  These guys are the real deal man, finally, buffalo wings from... Buffalo, New York!  Owners Tomas who use to work at 12th Ave Grill and Eric, freshly flown over from Buffalo, are kicking some serious butt with their wings, hoagies (east coast versions of submarine sandwiches) and chicken fingers.  I'm thoroughly addicted, been there three days in a row now.

Another thing that I have been missing here in Hawaii is a quality submarine sandwich. So as not to let any of my food desires go unattended to, Monday will be my day in heaven. I'll emulate one of my favorite styles of subs from Potbelly in Chicago. I've been eating them since the seventies and hooked a great many chefs on them too.  We'll make a toasted turkey, ham, salami and cheese sub with mustard, mayo, lettuce, tomato and herb-seasoned oil.  Come on down and dive into one!

We thought we should do our Reindeer Dogs more than once a year so catch one on the fly this Monday.  We like them Chicago Style, but I gotta tell you (as much as I cringe saying it) this one is good with ketchup too!  Have it your way though, it'll all taste great.  Basically we're looking at Alaskan venison blended with beef, grilling them brings out the zesty seasonings that has us loving the stuff.


Currently on a short visit back to Chicago I had to check in with my cupcake girls at MORE.  Their creative juices continue to be flowing and I waaaay over indulged in sampling the latest and greatest.  The Chocolate Easter Egg was at the top, it had the moistest chocolate cake with a cream filling and buttercream frosting sprayed with ganache chocolate.... oh so decadent! Then there was Foie Gras with tart cherry, Lemon Poppyseed, Almond Flourless, Passionfruit Meringue, Bacon Brittle, Chocolate Chocolate, Carrot Ginger and thennnnn.... comatose!  

So then after an hour break, it's off to dinner at Paul Kahan's Publican Restaurant, yes folks a place devoted to pork and beer.  Let's see, would that work in Hawaii? No brainer huh. Fabulous exotic beers from around the world, the best chicharrones I've ever had in my life, glazed pork belly, fried smelt with deep fried cured lemons (oh so ono!), fresh pork sausage, tenderloin and shoulder.  They had to roll me out of there without mind you, dessert, at least that had been taken care of early on.

So for all you folks with a sweet tooth, this substantiates the saying, when in doubt, eat dessert first!

Moist thinly sliced sirloin dripping in a zesty Italian aus jus gravy, green peppers or maybe some hot giardiniera on top all stuffed into Italian bread.  Oh boy, now that's what I'm talk'n about!

So granted that I've devoted hank's primarily to the carnivore but hell I even go veggie once in a while.  So as another version of my good friend Jenn's "No Dog" concept, Monday's special will be MEDITERRANEAN NO DOG.  Grilled eggplant, onion, tomato, roasted red pepper and melted mozzarella cheese in a warm bun topped with our killer chipotle mayo.   
It's making me feeling good about myself just thinking about it!

Well I had a hank-ering for something spicy and it's been a while since we've had hot links so we're do'em on Monday.  Spicy beef link sausage with tangy barbeque-mustard sauce, raw onion and hot sport peppers for any extra kick.  Fire your tongue up folks!

The current Honolulu Magazine's piece on us stirred up more cries for the Pizza Dog we did back in January (see 1/24 post).  So it's back, grilled fresh Italian Sausage, zesty pizza sauce, sauteed green peppers and toasted Mozzarella cheese.  Ciao down baby, it's mondo delicioso!

So this Australian, Yair Kellner, goes missing in subzero temperatures for four days in Alaska during one of the most difficult bike races imaginable, the 350 mile Iditerod Trail Invitational .  In their search did they bother to ask me, nooooooo. He was sitting at hank's in Waikiki with his wife Inna having a haute dog!  OK, so they had found him already.  He just knows where to go when you need to defrost.   He was wondering that should it happen again whether we deliver... ahhh, not!

Since we have the Burger Dog mentioned in Honolulu Magazine this week, let's bring it back for this Monday's Special. It's all about the seasoning for me, I love Maggi's Seasoning on beef and when charred up on the grill there's nothing better to me. Pile on your favorite toppings and you got something great to bite into.  So drop on by see what I'm talking about. It's crazy man!



Well it's great to see some recognition to those who do all the work around hank's. In this case my son Michael who runs all the operations at Coral St. Drop by and say hi to the Main Man in the news!

Opps a little late but it the first Monday of the month and you know what that means!... Italian Beef, get there soon before we sell out!

But besides that I also decided to make an old favorite recipe of mine from the days when I atarted cook. The year is 1977, I quit my job as a fire protection design engineer to become a cook at Café Figaro in Chicago. Debbie Majic was the chef, or in those days, just considered a cook at here European Cafe. In my opinion though, she was one of the best and part of the initiation of fine cuisine in Chicago. One of my most memorable recipe of hers was Chocolate Cheesecake, a creamy double chocolate cheesecake in a chocolate cookie crust. Lighter in texture than most it is most definitely a pure chocolate delight.

Making variations of finer dishes I’ve experienced in my career has been one of desires for hank’s. Partly selfish, partly latent cooking desires, I love bringing these recipes to Hawaii. Be there this Monday to share in some my passions.

This Monday's special is one I have been waiting to unveil for quite some time now.  The Currywurst!

When we first opened, Ashley got the inspiration for our spicy curry ketchup from an article about a sausage shop in Germany that was known for it the namesake dog.  What they did is add curry powder to a batter mixture that is used to deep fry a bratwurst with.  Most popular choice of sauce with the dog was, you guessed it, ketchup.  It looked tantalizing!  After Ashley made our inspired dipping sauce, I started thinking of methods to produce a different version of that Currywurst.  Lots of trails, not too many errors, they all tasted good but I narrowed it down to one.

I think a lot of people will get a kick out of this one.  I start with our popular Vienna Beef bratwurst in a plain bun.  Now the magic begins, I place a onion rings on top then drizzle a generous amount of our curry ketchup on top the whole thing.  Lastly is a sprinkle of the Thai curry powder used in the sauce...  Wnderbar!

So get ready for Monday, you don't want to miss this tasty creation!

In the wake of my nano second debut on Anthony Bourdain's show, No Reservations, I heard rumors of an obscure creation called the Mother-in-Law shown on his Chicago segment.  How did I escape my hometown missing this strange concoction?  We it certainly tickled my palate's interest?  It's a South Side thing where you take a tamale, slaps it into a bun, pour on chili and then throws on some cheese.  Not mean enough for ya?  How about some onions and hot sauce on top of it too, now that's bitch'n.  Sounded good to me,  so what the hell, lets live dangerously and put it on Monday's Special!

Not some ethnic anomaly mind you, this is one from Kukui is a favorite of some hank-ites. Portuguese sausage made with spicy kim chee mixed in, grilled and what better to put on it than... more kim chee!  Yah baby, we then slather on some hank's secret sauce and you got a local hit going on. Because this sure wouldn't fly in Kansas.  So come on down on this Monday for a taste of the wild wild... East? Whatever.

So how does this hot dog guy fit into the picture.  Well, I just guess it's all about good things and I know a good thing when I eat one.  Alan Wong is a great chef and friend so when he asked me to participate along with another good friend and local writer Jo McGarry in a special No Reservations segment called Food Porn,  I of course happily obliged.  Lusty food, it's right up my alley!  So catch the show this coming Monday, see if I get my 15 seconds of fame but regardless it should be good fun.

Where's da Beef?

Duh, it's the first Monday of the month and that means Italian Beef Sandwich special at hank's! Be warned, the word has been getting out and we've been running out pretty fast.  

Now for Italian Beef purists out there, here's some good news.  I found a new bakery for the bread this week, it's as close as it comes to Gonnella Bread.  Now if you're not from Chicago this will mean nothing to you but as with most classic foods, all components of the dish are important to recreate original taste memory.  In this case, it's the perfect sized loaf, crisp crust and soft interior of the bread that add texture, sponginess to soak up all that gravy and the right bread to meat ratio.  I can taste it already!   Race ya down to hank's!

In 2007, a little-known chef cooked a legendary meal—and then disappeared. Alan Richman checks in on Michael Carlson and his reopened restaurant, Schwa

This was truly an amazing piece telling the unsaid story of the event at Schwa nearly two years ago. I felt journalist Alan Richman did a wonderful job of portraying the intimate aspects of not only a man but also the world he lives in.  I could feel the story as I read... of course I had a connection to it.

Michael Carlson had worked for me as a line cook under Grant Achatz (Alinea) at Trio, my other life.  He had a brashness that could get in your face and a humble side that would return apologetic. Upbeat, funny, always on the move, it was hard not to like him.  When it came to work however, Michael was intense.  His precision was very evident in every movement along the line, aggressive but not bullish, focused and aware.  I admired him and very proud when he opened Schwa.  My dinner there was phenomenal and although I had many concerns about service, ambiance and financial stability, I considered it to be on the top of the Chicago list of great restaurants.  I recommended it to everyone, now only if they could get in.  The following year he took the Food and Wine Magazine's Top Ten list.  He had made it and he did it HIS way, even with being closed on weekends!

So when he abruptly closed after cooking for the culinary giants of the world, I was stunned. Rumors flew around about drugs, alcohol and rehab which I took with a grain of salt waiting to hear the real story.  It all didn't seem real, Michael was a bulldog, he wouldn't take that route. Unavailable by phone, voicemail was full (as usual), I was left to wonder.

So when I heard that he was planning to reopen I was ecstatic, a resurrection!  Excitedly I ate there last May after managing to reach him using every trick in the book to get in. Reservations are impossible.  Michael was the same, vibrant intensity, food reaching new heights and no explaination as to what happened.  Not that it mattered but I was always curious.  What a hell of a story!

So outside of hot dogs I obviously have an obsession with pizza!  Sorry folks, can't help it, so here it is for this Monday's special (1/26/09).  Seems simple enough, take a grilled Italian Sausage, pour on some homemade pizza sauce, add sauteed green pepper then pile on the mozzarella cheese.  Too simple, so here's a trick that I'm borrowing from my friend Cheryl, BLOWTORCH the cheese.  

Speaking of burnt cheese, it is interesting to look at certain cooking techniques.  Chef Dale Levitski (Top Chef season 3) once said to me "the flaws in the dish can be the highlight".   He would intentionally let the cheese on his Croque Monsieur ooze out onto the pan so it would get nice and crispy.  Amazing sandwich, I hired him to work at Trio because of it.  I guess that will have to show up as a special sometime soon.   Stay tuned.....

The Man likes hot dogs!  Inauguration Day is here and we find it worthy to make Monday's special in honor our new President so we give you... OBAMA DOG!  He has roots in Hawaii and Chicago so we will start with an island staple, Portuguese Sausage then let's pile on Chicago style trimmings, a condiment overload... mustard, onion, relish, tomato, pickle, spicy peppers and celery salt.  Did I mention the kitchen sink?  Here is a perfectly fused onolicious dog that is promising to be a hit, actually it already is.

Hank's will be serving its ono Grilled Portuguese Sausage Dogs at the Hawaii State Art Museum tonight starting at 5 pm.  This should be a fabulous music event with incredible artistS performing not to mention ourselves as masters of the grill.  

This "Live from the Lawn" concert, which happens every first Friday, honors the Grammy nominees for Best Hawaiian Music Album. Featured artist include Keola Beamer, Tia Carrere, Cyril Pahinui, and Raiatea Helm.  Wow, I can't wait.  So bring a blanket, buy a dog and swoon to the tunes at HiSAM tonight (til 9 pm)!
